To master the creation of Italian Porchetta, a specific animal must be sourced. You cannot use commodity pigs. We have partnered with Robert Winner Sons to secure pigs that are specifically raised to meet our stringent requirements. The breed of pigs is a hybrid. It is a combination between a Yorkshire and Duroc.

Robert Winner Sons began in 1928. As the business has stayed American family run, 7 grandchildren manage the business today. Over 5500 animals are in hog barns at one time, spreading out over several different farms. The animal feed is actually grown by the Winner family on these farms. They also have a mix mill to grind all the feed for the animals, insuring precise controls up to the point of harvest. In 2001, the processing facility became USDA inspected. Each animal is independently harvested, inspected, and then cut to our specific requirements.
